A Mexican girl was trying to explain to me
how to make a noodle soup earlier today. One of the things she said was, “Don’t
add the salt until, like, ten minutes after you add the tomato, otherwise the
salt will cut the tomato.”
The salt will cut
the tomato. I was confused, and asked what she meant, and she said, “The salt
will stop the noodles from absorbing the flavor of the tomato.”
